While most producers tend to mix white (Tuber Magnatum Pico) and bianchetto (Tuber Borchii Vitt.), we believe that each truffle has a unique distinctive taste that should not be adulterated. Alfagia di Volterra always uses one type of truffle in each of its products, rather than mixing them to cut down costs. We therefore propose two different honeys: a white truffle honey using the precious winter truffler, and a bianchetto honey based on the delicate bianchetto or marzuolo truffle found between January and March. We use an light acacia honey that lets the distinctive flavor of the truffle shine through.
The result is a unique indulgence that is sinfully delicious. Our honeys makes a wonderful accompaniment to cheeses, is delightful on ricotta toasts, and are perfect as a meat glaze or marinade. And for a seriously indulging treat, you can also drizzle them over ice cream.
