Abruzzese comes from Abruzzo, a region of Italy located along the East-Central coast of the nation. The food of the Abruzzo region tends to be rustic and simple with a high focus on the ingredients.

On of the most popular salami of Italy, a typical dry cured sausage. Our Abruzzese is made from choice cuts of fresh pork that are combined with natural seasonings and is dry-cured for at least 10 weeks to achieve a mellow Italian salami flavor.

The cotechino /ktɨˈkn/ is an Italian charcuterie product, similar to salami, but requiring cooking; usually it is boiled at low heat for about four hours. Its name comes from cotica (rind), but it may take different names in the different production areas. According to tradition, it is served with lentils on New Year's Eve, because lentils—due to their shape—are 'credited' to bring money for the coming year.

A dry cured, dense, and flavorful sausage. We use a fine grind of pepper, very lean pork and a slightly different drying process than its sister sausage, the traditional sopressata.
Fortuna's SOUPY® aka SUPRI®, Soupie an Old World tradition that was brought here from Italy hundreds of years ago and was passed down from generation to generation, originating in Calabria, Italy. Like many other fine arts it is a dying tradition. At Fortuna's we have taken our old family recipe and resurrected the fine art of making dry-cured sausages and salami. Each stick is hand-made, from the precise trimming of the pork, to stuffing it into casings* and tying then hung to air dry for 8-10 weeks.
*Casing is removed prior to packaging

Red Wine & Garlic Salami with no nitrates

Sopressata- All Natural, Nitrate Free



Sopressata is a much coarser grind than our other salami, our mildly hot has a touch of red pepper flakes.
Different from our Calabrese style SOUPY, here we add whole peppercorns, and a hint of garlic mixed with lean natural pork. We also shorten the drying time to about 8 weeks so it is a little softer and creamy texture-melts in your mouth. We do not use nitrates or nitrites with exception to the natural occurring in salt and spices.


Our "HOT" is a mildly hot , "SWEET" is just black pepper

This classic is something that will remind you of Italy & you will want to keep it on-hand for all your family gatherings. Our Sopressata is great ANY time of day!
