Cover the bottom of frying pan with thin coat of olive oil. When heated add chopped garlic and sausage, cook about 5-8 minutes until sausage is cooked and crumbled, then add leeks and continue to cook until soften and tender.
Add spinach or swiss chard and the 5 cups of broth stir and let simmer on low for about 30 minutes. Salt and pepper to taste. If you like it a little soupier add more broth or water and continue to cook another 30 minutes
Serve in bowls topped with grated Romano cheese and crispy bread for absorbing all that heart warming broth.
