Cheesy Tortellini with Salami, Olives, and Spinach
Cook tortellini in salted water, reserve 1- 2 cups of pasta water for later. Place in ice bath to cool and coat with a little olive oil to prevent sticking. While tortellini is cooking, saute onion and garlic in a bit of olive oil to thinly cover the bottom of the saute pan. Use a pan big enough to add the tortellini at the end to reheat and saute flavors together. When garlic and onion are cooked through, but not browned, add diced meats and saute for another 2-3 minutes, then add olives. Add the cooked tortellini and 1 cup of reserved pasta water. Gently fold all ingredients together. Add more water or a bit more olive oil for a saucy texture. Add cheeses, basil, and black pepper. Taste first before adding salt as meats and cheese are already salty. Serve Immediately.
Eat hot or as a cold summer salad!
